Before this, whenever I launched Itch, some black and white pattern would just appear on the top left, so I uninstalled it, but a file stayed, I installed another launcher, but it has that error message, any tips?

Try killing anything that has the itch.exe name in Task manager, then running itch-setup again ?

Tried that, it did install a new launcher, but whenever I launch it, all I see is a incomplete itch logo at the top left
It also did finish setting up
