CI failing due to ESMF import error #286

All CI tests are failing with an error like this:
E ModuleNotFoundError: No module named 'ESMF'

This seems to be the exact same issue described here: pangeo-data/xESMF#246

I will for now pin ESMF to >=8.3.1 as recommended there.
