With log level INFO everytime a DLNA client connects to Jellyfin you have multiple log lines for every library item in jellyfin.log AND syslog. If you have a large library, then you have multiple thousand log lines in jellyfin.log and syslog
Changes
Set log level to DEBUG, Ubuntu defaults to INFO or higher in syslog => no more logging
