Refactor with Dependency Injection and Mocking

Test coverage currently relies on the existence of Record Types in the org. This could be refactored to inject dependencies at runtime in order to mock record types during tests.

This matters less for potential packaging, as we can include unpackaged metadata for the test runs during package create.
