Interactive configuration manipulation

It may be useful to provide an interactive way to set freezer capacities, container type ratios, etc.
The configureFreezerVIS.R script already creates placeholders for these with capacities and ratios at 1.

This could be accomplished with two editable tables, potentially via rhandsontable (http://stla.github.io/stlapblog/posts/shiny_editTable.html).
