Summary

Update the https://github.com/jolt-org/docs-preview-template repo to utilize copier so that we can initial a new docs repo on the fly as well, then update the README here

We also need to add in the PDM commands if not done: https://pdm.fming.dev/latest/usage/template/#use-other-project-generators. these can be used with copier
