I have ran into the same problem. Almost non-responsive unit when operating on channel 11. It works much better on other channels (Channel 1 is good, channel 6 is alright). Strangely enough though I haven't seen this issue on the other dozen esp32 devices I'm running. Probably something specific to the esp32-cam?

Update again after more testing. I can only get very consistent results with channel 1. Even channel 6 causes timeouts. Not dealing with interference here, I've confirmed the channels are clear of that, or at least a low enough level where it shouldn't matter.
