Long term I would like to have my site in few different languages: English, Mandarin, Hindi. Maybe Icelandic, Spanish, and French.

Figure out if there is a proper way in HTML5 to indicate the availability of other languages, for accessibility and SEO reasons.
Research if there is an established way to deal with translations in GatsbyJS.
