If I ssh into a distant machine with ueberzugpp installed, can I display images on the local machine (which actually has ueberzugpp installed too)? I haven't managed so far.

You could with the iterm2, sixel or kitty backend if u++ is installed in the other machine. The X11 backend might work if you have X11 forwarding enabled but I can't guarantee that.

That's the setup I tried: Wayland on the client, Xorg on the host, ueberzugpp installed on both devices, and foot terminal used to open the ssh session with -X, but no dice. I'm not sure which protocol is used by ueberzugpp in foot, I assume it's sixel (and works locally).
