Something that would differentiate it from any random fantasy world; some driving idea; some specific concept; etc

I think that it will become more and more particular as long as we keep creating it.
Choosing a driving idea is for me just a "creating" trick, that also could product something too orientated in one (even general) direction, that ends up being a universe created for one "thing", too simple, not vast enough.

We have to research originality in our work, but in the details, giving attention to what makes our elves different, why the dwarves likes mushrooms. Not giving the four more legs. And from this, will emerge a interesting thing. The universe is not oriented, our real world has no direction, or a holly one. And i guess that we dont want to implement, in kestal/univers, a holly concept that leads the world to something.

To resume, if we choose a driving concept, I think that it leads to a more factice and less "true" universe, and that if we aim for good details construction, and originality in the small but important things, a good creation could emerge.

Sorry if it is too confused, it represents well the state of my mind.
