Do we go full on non-creative mode, you have to harvest everything you use? If so, we need a way to regenerate wood - add seeds as a drop from the leaves. Plant the seed and grow new trees (can only plant in dirt)

Maybe a flag for creative-mode that simply gives you an indefinite amount of everything, the way Minecraft does it. Personally I like a non-creative mode more, but I see a lot of potential for a creative mode, so why not both?

I'm personally more of a creative-mode fan, so I'd definitely add a flag somewhere to satisfy both!

Makes sense to me. Probably add some chat / commands to toggle if you're the server host.

what about crafting/creating new items from resources? I think it would be good if a slightly-unique crafting system was employed to make the game potentially more fun/more original :D

Though you could definitely source inspiration from games like Animal Crossing, Don't Starve, Minecraft, Astroneer, Stardew Valley, Forager, Raft, and Terraria!
