Test knoxite on Windows, make sure our tests & goreleaser builds work across all platforms.

Sine I still have a running Windows instance, I'd offer to take care of the manual testing on Windows, at least.

@ma-hartma Builds for Windows are fixed, tests are running and passing. This should be ready for a manual test.
