Just looking into what more can be applied in this app to learn the stuff, and why not databases?
the concept could be like this :

Have a min and max variable to store the min and max of each sensor values
Store those min and max per sensor per value per day
Make appropriate model
Restore those stored values on app startup

So this issue can be treated as a database epic. Sub Issues :
