Raspi-config switches back to the default version of raspbian OS after update and upgrade.
Is there any way to switch back to the old version?

The raspi-config in the zero 3 image appears to be stock raspbian right on the image. I thought I ran into the same thing, but just mounted the image itself to copy the image's version to my machine and it's already not-like the manual.
I've run apt update and apt upgrade.
Raspi-config switches back to the default version of raspbian OS after update and upgrade.
Is there any way to switch back to the old version?
