For example, on a system where I removed nano and installed vim instead, apt sources does not work.

I suggest using $EDITOR, or /usr/bin/editor, or /usr/bin/sensible-editor - in the order described here: http://www.debian.org/doc/debian-policy/ch-customized-programs.html#s11.4
