Here's another couple of thoughts you might consider?

There are a range of "forward looking" skills which are going to be in huge demand in the future I believe

You already talk about cryptography but within the next couple of years we are going to be legally required to secure devices through their lifetime (perhaps 10 years +). How do we do that?

Engineers need at least to understand concepts of designing secure embedded systems including

  • secure boot
  • secure OTA update
  • key management and exchange for attestation, authentication and encryption
  • encryption of firmware and filesystems
  • use of secure enclaves

Then next AI/ML are going to be HUGE in my opinion in the very near future so

  • Use of AI/ML models on embedded systems both at the edge and in sensor level devices
