Would it be remotely possible to add the ability to use command-line options
when encoding in MP3? I would love to be able to go into Preferences > General
> Output Format > LAME MP3 and then click on Option and be able to type in LAME
command-line options for even better encoding.

Please? Unless this can already be done via the command-line version of XLD?

LAME support on XLD is provided by the libmp3lame library, so there is no
command-line support. What options do you want to use on XLD?

If you compile LAME from the actual source code, there are plenty of
command-line options. It would be good to utilize their CLI options through
the XLD GUI.

Again, XLD does not use the LAME CLI frontend. You should know that the option
is handled by the LAME frontend, not by the library.
