according to instructions in documentation I have set the MAILTO part of the cronjob for archiving, but I can not find any postfix in the container, how will the email be sent out? if there is a mail forwarder in the container where? if not is it possible to add in future versions?

This image does not run cron nor smtp only Matomo. Use a separate container or schedule docker exec ... from your host.
