Is it possible to increase the x & y axis for this build? I'm thinking to utilise it for a full sheet size.

To extend the X-axis and Y-axis, you need to increase the length of the aluminium profiles and buy longer MGN12H rails. I'm not sure if it's possible to build a machine that is able to cut full sheets with the current design, as you probably won't find MGN12H rails that large, and I'm not sure that it's a good idea to link them up.
