I want to be able to show Docker deployed over AWS EC2 instance. Is that even possible to compose nodes like this?

I'm not sure this is possible with Graphviz. I have to research about this.

is there any update on this?
I want to overlap the IOS/Apple and Android logos show a mobile app on both platforms, but I don't want to make two objects.

Current solution: import an own logo

You will have to use the neato layout engine.
