It would be nice to show information about the video feed on screen.

A couple of suggestions:
Video bit rate and resolution.
Link latency.
Packet loss %

Showing/hiding the information off should be possible at run time. Perhaps use gestures again, maybe three taps for start/stop recording and two taps for show/hide information?
