Ingredients

  • Plantains

    • 4 large ripe plantains
    • 1.5 Tbsp coconut oil
  • Rice and beans

    • 1 cup dry rice
    • 1 can black beans
    • Optional
      • salt
      • cumin
      • chili powder
  • Slaw

    • 3 cups finely shredded cabbage
    • 1 cup finely chopped green onion
  • Toppings (optional)

    • Guacamole
    • Salsa

Directions

  • Prepare rice
  • Cut plantains into 1/4" thick slices
  • Add plantains to skillet with coconut oil and fry for about 15 minutes, flipping throughout
  • Add beans to skillet with optional spices and heat until bubbling, reduce to simmer
  • Toss cabbage and onions to make slaw
  • When all is cooked layer rice, beans, plantains, slaw and any other toppings
