Ingredients

• 2 Tbsp olive oil
• 1 medium onion diced into half rings
• 2 garlic cloves, minced
• 3 Portobello mushroom caps, 20 oz total
• 1 cup vegetable broth
• 1 Tbsp soy sauce
• 1 Tbsp Worcestershire sauce
• 1/2 tsp dried thyme
• 1/4 tsp liquid smoke
• 2-6" sandwich rolls

Directions

• Add 1 Tbsp oil to a skillet
• Add onion and toss with oil, cook until caramelized, about 20 minutes
• Add garlic and cook 2 more minutes
• Transfer to a plate
• Add the remaining oil to skillet with mushrooms, don't crowd them too much, it make take multiple batches
• Cook until lightly browned, about 5 minutes, flip and cook for 5 more minutes
• Add onions back to skillet, add broth, sauces, thyme, and smoke
• Bring to a simmer and cook for about 5 minutes
• Serve immediately
