Ingredients

  • 1 medium onion, chopped
  • 7 cloves garlic, chopped
  • 1 1/2 tsp chili powder
  • 2 tsp cumin
  • 1 1/2 tsp basil
  • 1/2 tsp cayenne
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt
  • 2 Tbsp olive oil
  • 1 15 oz can black beans, drained
  • 1 15 oz can great northern beans, drained
  • 1/2 cup nutritional yeast
  • 2 1/2 cups chunky salsa
  • 14 oz yellow tortilla chips
  • Optional
    • Green onions
    • lime juice

Directions

  • Preheat oven to 400
  • Combine onion, garlic, oil, chili powder, cumin, basil, cayenne, paprika, and salt in a skillet and cook for 5-10 minutes
  • Add beans and stir well
  • Spray a 9 x 13 glass baking dish
  • Add a layer of chips to cover bottom of pan
  • Add half the bean mixture to the chips
  • Add 1/4 cup of nutritional yeast
  • Add half of salsa
  • Add another layer of chips then beans, nutritional yeast, and salsa
  • Cover with a layer of crushed chips
  • Cook for 25-30 minutes
  • Top with lime juice and green onions
