This is my setting. When I try to run nix run github:numtide/nixos-anywhere -- --flake flake.nix#nixos --vm-test to test my configuration, it throws some errors. I tried to find out why, but never got anywhere.

ah yeah, that is because you use the type = "table" partition tables. they are not compatible with the test framework. I suggest upgrading to type = "gpt" style partition tables.
