Allow to manually select a specific R version

Now there are versioned Rocker images: https://github.com/rocker-org/rocker-versioned/

https://github.com/metacran/rversions might become handy.

default is the "current" version of the generating machine, maybe use paste0(version$major, '.', version$minor)
users can manually set an R version to use
users can manually set a base image
