Allow easier switch-out of models

Particularly Jones et al 2001 vs lewkowicz. Currently, a lewkowicz=true flag is hard coded into stress.h, requiring a code change to swap out the underlying velocity deficit model. This option should be made available, and preferably refactored into a wider options structure for the whole of the ADEM process.
