We should review the docs ahead of 1.8.0 to make sure they're up to date as we prepare to move to 2.0.0

Add documentation for testing out/previewing 2.0.0 changes
Make sure config options work as expected
Make sure all config options are documented - especially data - we may be missing some
Make sure any redundant docs have been removed
