We're currently evaluating pifPaf.

Is there a way to confirm which datasets were used in the models available for download?

It would only be a combination of:
Coco
https://cocodataset.org/#home
CrowdPose Dataset
https://github.com/Jeff-sjtu/CrowdPose
PoseTrack
https://github.com/umariqb/PoseTrack-CVPR2017

And it would not have been trained on any other material?
