Collect and apply Thumbnailer plugin enhancements

I also wonder in which capacity the image-process plugin at https://github.com/pelican-plugins/image-process is capable to replace thumbnailer altogether. Maybe the two are similar in scope and feature to focus our efforts on one plugin instead of two.

Would be nice if that ends up being the case. I think the community is served better when we can combine our efforts and reduce plugin functionality fragmentation.

I used both at one point so I'll probably investigate this in the (distant 😅) future!
