During development we decided to fix our plutus-apps dependency to e25565ae8bd8a5b06b095e8fdeec90ce1ba65773. This was the only commit that was compatible and worked across all dependencies at the time.
With the conclusion of this project we would of course like to ship with an up to date version, thus adapting to SDK v1.2.0. This includes potential changes to the API's used.

Additionally we can upgrade the used chain-index, which might have benefited from the additional development time.
