feat!: add simd feature and remove polars/simd from the default feature #262 starts using feature flags and controls features with environment variable RPOLARS_ALL_FEATURES.
fix: support Rust 1.65 #280 allows changing profiles via the environment variable RPOLARS_PROFILE.

These should be noted in the documentation for the installation.

For consistency, might it be worthwhile to rename the environment variables from RPOLARS_* to R_POLARS_*?
