Align project labels with PyMC repo #23

Issue with current documentation:

The labels are used to tag issues and PRs.

This repo currently has the GitHub defaults, but we should align this with the set of PyMC and Aesara labels that are already specialized to the kinds of problems coming up.

Done. Not all labels were copied, but the most relevant ones to my best judgement. Aesara labels' color codes might be slightly off.
