after poking around a bit in the data, it would be nice to see if we can include an interface or example to sentinal data that could be used as a dasymetric layer

sentinal data are raw imagery, but there are existing lulc data too:

I dont think raw sentinel data is useful here, but #130 has an example that uses copernicus data that's available for the whole globe, so I think that suffices here. Once that's merged it's probably fine to close this
