Add doc to explain how to work with notation renaming

What happened in your environment?

We recently rename all notaryv2 strings to notation across the repo to be consistent with notation project. For the verifierReports, the verifier name of notation would be changed from notaryv2 to notation as well, we should have a doc explaining how to work with change.

What did you expect to happen?
