<li>半斤鸡胸肉横切2或3片,一面打上十字花刀(吃着不塞牙而且腌制更容易入味),从另一面竖切长条,再切成鸡丁</li>
<li>大葱拍扁再切碎,生姜拍破,放入清水抓几下制得姜葱水(使鸡肉更嫩且去腥)</li>
<li>10克干黄酱(或黄豆酱),20克甜面酱, 姜末, 料酒多一点,生抽10克提味提鲜,搅拌均匀</li>
<li>一个鸡蛋清和20淀粉搅拌均匀</li>
<li>黄瓜切1/4竖条去芯再切丁后放入盆中加5克食盐搅拌</li>

<li>倒入蛋清糊搅拌上劲</li>
<li>黄瓜去水分擦干</li>
<li>中小火四成油温鸡丁转圈放入锅中.两次滑油,鸡丁定型后捞出静置5秒,再次滑油中火1分钟鸡丁浮起即捞出</li>
<li>锅中少许油放入香油(酱香味更浓郁),先放20克白糖(糖多少因人而异)炒至融化</li>
<li>倒入酱汁火调小用勺子向一个方向慢慢推动,时间长点炒干酱汁多余水分味道更香</li>
<li>倒入黄瓜丁炒8下;调大火加鸡丁翻炒10下出锅</li>

<li>在热阶Medium-Low上预热锅2-4分钟,使其毛孔(pore)收缩</li>
<li>锅上加1滴水珠,水珠变成水球在锅面滚动说明余热合格了</li>

<li>肉类不要频繁反动,要等表面结焦壳再翻动. 蔬菜可以更频繁翻动</li>
<li>温水手工清洗后擦干,避免尖锐物品划伤锅面</li>
<li>滚水后加盐,不要冷水加盐,避免盐腐蚀锅</li>
<li>锅巴用水浸泡后轻轻擦除</li>
<li>可以在锅中煮白醋来清洗难清楚污渍</li>
<li>不锈钢把(handle)可能达250°C,应避免烫伤</li>

<li>红豆过滤取红豆沙豆皮不要了.</li>
<li>陈皮也剁碎搅拌加入豆沙(这步可选)</li>
<li>可加入泡了一晚上的莲子百合,重新中火沸腾豆沙半小时.需不断搅拌避免豆沙烧糊(这步可选)</li>
<li>最后放糖否则莲子百合很难煮烂.诀窍时放"双糖", 大半块片糖醇香, 冰糖清甜40克.滚10分钟等糖溶化就大功告成</li>

做海鲜饭的米,国内容易买到的是邦吧米(Bomba Rice),在西班牙被广泛种植的一种短粒米,也叫瓦伦西亚米(valenciana)。 它吸水量比普通米强,可吸入更多汤汁让米饭更入味;在吸水后依然可以保持坚挺,弹弹的有嚼劲。
制作risotto的这个意大利arborio米,也可以用来替代这个西班牙的valenciana.实在不行也可用东北米替代.

有海鲜的 paella 通常会搭配一瓣柠檬,但是千万别替客人把柠檬汁挤在锅里,一定是放在盘子边上,客人随吃随挤。

材料,
</p>

<li>3瓣大蒜切碎</li>
<li>1/2 洋葱切碎</li>
<li>1/2 红椒或青椒切碎</li>
<li>1 乌贼洗净切小块 (没有乌贼小块鸡胸肉也可)</li>
<li>12大虾去壳洗净</li>
<li>8青贝</li>
<li>1/3杯橄榄油 (extra virgin olive oil), 约80毫升</li>
<li>1/2杯番茄酱 (112克)</li>
<li>1/2勺辣椒粉(sweet smoked Spanish paprika), 约1.30克</li>
<li>2又1/2杯 鱼汤 600毫升</li>
<li>1/4勺 藏红花(saffron threads or powder), 约.17克</li>
<li>1杯米, 约200克</li>
<li>2个柠檬块</li>
<li>切碎的欧芹(parsley), 可用类似草类调料代替</li>
<li>海盐 & 黑胡椒</li>
</ul>

步骤,
</p>

<li>洋葱青椒切碎,乌贼切小块(省事就不切)</li>
<li>加橄榄油中火1分钟, 锅底洒海盐加乌贼煎1.5~2分钟后取出</li>
<li>加洋葱和大蒜炖1分钟后加青椒搅拌煮3分钟</li>
<li>加番茄酱,辣椒粉,海盐,黑胡椒煮2分钟至番茄酱黏稠后,重新加入乌贼,鱼汤或水,番红花.</li>
<li>水滚后撒入米煮5~6分钟后,加入大虾和青贝再煮5分钟. 转小火至鱼汤被米吸收(可能要0.5-1小时),再开中火1-2分钟以生成锅巴(socarrat)后关火上盖焖</li>
<li>5分钟后开盖装饰以柠檬和欧芹</li>
</ul>
