opentelemetry-collector-contrib is moving fast and often introduces breaking changes in configuration options. Being the 0.52.0 version from available examples more than one and a half year old, this commit updates the docker-compose manifest and otel-collector configuration according to the latest available version of otel-collector at the current time (0.88.0). The most significant change between 0.52.0 and 0.88.0 is that the jaeger exporter has been removed: jaeger acquired native support for trace ingest via OTLP. Then we configure otel-collector to feed jaeger via OTLP GRPC
