docs: use American English spelling for word behavior #7969

Changes:

  • Change instances of behaviour -> behavior
  • Change instances of Behaviour -> Behavior
  • This also changes the link to a section heading in the faq.md file

This PR only changes .md files.

Context:

This ensures we're using the American English spelling.
Helps with issue #7626.
