We use gocryptfs with macFUSE on MacOS.
There is some security restriction on Mac with Apple silicon processor - it is necessary to allow kernel extension.
Did you somebody try to use Fuse-t instead Macfuse on MacOS?

Yes fuse-t is interesting! Once support in the go-fuse library is merged, gocryptfs can take advantage of it. Follow progress here: hanwen/go-fuse#453
