Appveyor not testing on node v6 #699

Current appveyor isn't testing against the latest stable release of node (as of writing v6.1.0).

Having done some research, it looks like we can specify it to get the latest stable with nodejs_version: 'stable'.

Running it on a local branch to test and if all good will make a PR.
