Change links to medium.com to point to internal blog pages #338

At the bottom of several pages of the site, we have a block that links to a post on our older blog hosted on Medium. Now that the blog has been brought back onto the sheltertech.org, we should update those links to point to the internally-hosted ones. For example, at the bottom of the home page, we have a "ShelterConnect Spotlight" that links to the blog post on the Mission Hotel on medium.com.

Closing, as we are in the process of porting the site to a no-code platform, Wix, so that the non-engineering teams at ShelterTech can maintain the corporate site on their own.
