Hi,
At the moment, binaries for Gifski are only distributed through the App Store. Is it possible to distribute via GitHub releases and brew casks? Brew has an (highly) outdated version of Gifski.

No, sorry. Not worth the additional effort.

The Home-brew formula is for https://github.com/ImageOptim/gifski, not this app.
