docs: Document new features and config changes for 2.0.0 #977

Closes #928 .

Will have to make sure for 3.0.0 we update this document in every PR. I kept track of config changes in #928 and just went through the PRs now to find all the new features. Hope I didn't miss anything.

Biggest part of the release notes is trying to explain how this can break configs.

The other 2.0.0 PRs that are still open are internal code changes so have no impact on this.

Storage quota (#973) seems like something that should be listed under "New Features", no? (And potentially shape support in #1000, although that is still a draft.) When would v2.0.0 be released?

(sorry for the post-merge comment; somehow missed this PR)

In the process of releasing it now 😃

New features are definitely welcome, but will be for v2.1 or v3 (depending on whether they involve breaking API changes).
Note that such releases can happen relatively fast, so I don't expect much delay once these features are finished.
