While reviewing #11697 I noticed that we don't create a RetryTemplate for the message listener that is auto-configured. Rather we pass options to the underlying object that will create the RetryTemplate. For consistency we should create a RetryTemplate using the exact same logic.

This will be a base for further customizations of the RetryTemplate.
