Scenarios which should be covered:

eth -> stellar withdrawal
erc20 -> stellar withdrawal
eth -> stellar refund
erc20 -> stellar refund
xlm -> ethereum withdrawal
stellar asset -> ethereum withdrawal
xlm -> ethereum refund
stelalr asset -> ethereum refund

We should test both the happy path and error conditions
