Remove/replace lodash dependency

Opening this separately since it requires more work (refs #598)

Right now on main we have 8 remaining lodash functions:

• cloneDeep (see Replace _.cloneDeep with _.merge #622)
• escape (see Replace _.escape with native JS #620)
• invoke (see Replace _.invoke with vanilla JS #461)
• merge (see Switch to the lodash.merge package #619)
• pick (see Replace _.pick with native JS #463)
• trim (see Replace _.trim with native JS #418)
• trimStart - wondering if we can use foo.replace()? We might need to escape any special regex characters, though
• zipObject (see Replace _.zipObject with vanilla JS #616)
