As mentioned in Dortania's OpenCore guide, a new version of OpenCore is released every week. Do you think It is worth updatinging it for Dell Inspiron 5559 whenever there is a new version?

its not every week
first week of month
and yes its recommended to stay on latest version of OC

Can you recommend any guide to to update to MacOS Monterey using OC? Couldn't find any

Wait for few days let the stable be released
In beta and rc bluetooth is broken and bright ness and some other things
After the release or on the day if the release I believe it will be on 25th every kext will be update mainly bluetooth

If you want to install Monterey
Update the oc to latest version 0.7.4 and set the secure boot to default that should works
And some smbios have problems as some of them have t2 chips

Just wait for fews days everything will be updated
