My description is wrong.
I just want to allow the demo to be started in containers but pointing to any redis (outside the compose)

As long as you used Spring's RedisTemplate you can configure it with env variables
e.g https://github.com/Redislabs-Solution-Architects/brewdis/blob/master/docker-compose.yml
