Can't open in Notepad or popular pre-existing third party editors that usually can edit the file.
I just want to toggle the coords option on.

I'm an idiot...
After checking the restart script, I saw how you can edit the game commands via ubuntu console.
screen -Rd minecraftbe -X stuff "gamerule showcoordinates true $(printf '\r')"
Hopefully this'll help someone else out.
