provide sample Kaltura Caliper query into env_sample.json

The env_sample.json file only lists UDP BQ queries for canvas file and pages access. U-M documented other resource access queries inside the Deploy: Institution Architectures wiki page.

Since Kaltura is used by multiple Unizin institutions, we can add the Kaltura resource access query into the env_sample.json file.

Test passes! this change doesn't impact Prod as prod server already has Mivideo/Kaltura query
